Description
Purple Kohlrabi is a unique and attractive member of the Brassica family, producing a striking spherical bulb (the swollen stem) that sits just above the soil line. It features a beautiful, intense violet-purple skin and a brilliant white, crisp flesh inside.
The flavour is delicate and distinct: mild, slightly sweet, and nutty, tasting like a refined cross between a cabbage and a turnip. This variety is highly prized because the bulbs remain tender and non-woody even as they grow larger, provided they are kept well-watered.
Culinary Uses:
Raw: Slice thinly for a fantastic crunch and sweet flavour in salads or serve as crudités with dips.
Cooked: Excellent when roasted, steamed, added to soups, or prepared like potatoes. The young, tender leaves are also edible and can be cooked like collard greens.
When to Plant: This cool-season crop is perfectly suited for the Maltese climate outside of the peak summer heat. Transplant your seedlings between August and October for a quick autumn and winter harvest.
Location/Sun: Choose a location that receives full, direct sun for strong growth and good bulb development.
Soil & Potting: Plant into fresh, deep, and well-drained soil that is enriched with compost. Avoid planting too deep; the bulb should form right at the soil surface.
Spacing: Kohlrabi is compact, making it great for small spaces or containers. Space plants about 30 cm apart in the row and 50 cm between rows.
Watering: Keep the soil consistently moist. This is the single most important factor. If the plants suffer from drought stress, the bulbs will quickly become tough, woody, and unpalatable. Water frequently and moderately.
Fertiliser: While not a heavy feeder like cauliflower, a light feeding with a balanced fertiliser once a month will support optimal growth.
Pests: As a Brassica, protect against cabbage white butterflies and aphids.
Harvesting: The cycle is fast, around 60 days from the time you transplant your seedling. Harvest the bulbs when they are around 5-8 cm (2-3 inches) in diameter. Simply cut the bulb at the base of the stem. Smaller bulbs are the most tender and flavourful.
