Description

Plant : Lamiaceae Rosmarinus officinalis L. perennial (the average duration of a crop is around 5-6 years and even more), evergreen, with a prostrate habit, very rustic. It does not tolerate water stagnation and low temperatures.

Flowering : all year round in the islands and from April to August in the rest of Italy; small blue-lilac flowers.

Part used : twigs and leaves.

Aroma : intense of incense and camphor.

Use : in the kitchen it is best to use it fresh to season cooked foods (on grilled or roasted meats and fish and to flavor sauces and gravies) or even to obtain essential oils. Also used as an ornamental plant to embellish the slopes (seen the drooping posture) or to keep in pots; when it blooms it has a very pleasant appearance.

Properties : tonic and stimulant of the gastrointestinal, diuretic, cardiac functions; promotes digestion and appetite.

Harvest : cut the most tender parts of the plant before flowering which can be used fresh or dried (in this case it loses part of its aromatic properties) in airy places in the shade.
