Description
Indivia Riccia is a variety of Endive (Cichorium endivia), a type of chicory. It is distinguished by its highly finely-cut, curly, and fringed leaves which form a loose, attractive rosette. The outer leaves are typically dark green and have the characteristic refreshingly bitter, slightly tangy flavour typical of chicories. The inner leaves, however, are naturally lighter and milder.
Culinary Uses: This is a versatile green, fantastic in Mediterranean cooking:
Raw: Its unique texture and bitter flavour make it a sophisticated addition to mixed salads, balancing sweeter elements like apples, pears, walnuts, or rich dressings.
Cooked: The bitterness mellows beautifully when briefly sautéed, braised, or wilted with garlic and olive oil, a popular preparation in Southern Italian cuisine.
When to Plant: Indivia Riccia is a cool-weather crop. Transplanting should ideally happen between late August and October to allow it to grow quickly and mature during the mild autumn and winter period in Malta. Planting during high summer heat can cause it to bolt (go to seed).
Location/Sun: It needs full sun during the cool months. Good air circulation helps prevent leaf rot.
Soil: Plant in well-drained, moderately fertile soil.
Spacing: Give the plants adequate space to grow a full head, spacing them about 30–40 cm apart.
Watering: Keep the soil evenly moist. Consistent watering is crucial to prevent the leaves from becoming excessively bitter and tough.
Blanching (Recommended): To achieve the desirable, mild, pale yellow-to-cream centre (the “golden heart”), you should blanch the head approximately 7–10 days before harvest. Gather the outer leaves loosely and tie them together near the top. This shades the centre of the plant, preventing chlorophyll development and reducing bitterness. Do this only when the leaves are completely dry to avoid rotting.
Harvesting: Harvest the entire head by cutting it just below the soil line when the head is full and mature (about 70-100 days from planting, depending on the variety and conditions).
