Description

Vigorously growing plant. It produces a high amount of fruit. Eggplants have an elongated oval shape, with a soft and tasty pulp, a very thin smooth purple skin.

In the kitchen, the silk aubergine is appreciated for the many recipes that can be made: diced on pasta alla norma, cooked in the oven, fried or roasted with a pinch of mint or parsley, preparation of fillings, rolls, tasty eggplant parmigiane and in in particular, it is used to prepare preserves in oil.
