This type of cabbage belongs to the Paksoi family, has purple stems with fresh green leaves. Harvest the stems early, when the flowers are still in bud, because that’s when they are the tastiest. The stems are soft and fleshy, great for stir-frying or using in salads; steam the stems briefly. Sow in a greenhouse from February to March and in the field from April to August.
